Asinan is a type of food made by pickling (through pickling with salt or pickling with vinegar), the ingredients being pickled are various types of vegetables and fruits. In Indonesia, pickles are one of the specialties of Indonesian culinary art. The term salty refers to the pickling process by immersing fruit or vegetables in a mixture of water and salt. Asinan ingredients are slightly similar to rujak ingredients, the main difference is that rujak ingredients are served fresh, while asinan ingredients are served salted or pickled. There are many types of pickles, but the most famous are Asinan Betawi and Asinan Bogor. Asinan can be found for sale in restaurants, stalls, and traveling vendors in Indonesia.
