This aromatic delicacy is crafted using a special rice variety called kaima rice or jeerakasala rice, which imparts a unique texture and flavor to the dish.To prepare this heartwarming delight, you will need the following ingredients: 1.5 cups of kaima rice or basmati rice (approximately 300 grams), 4 tablespoons of ghee (clarified butter), 12 to 15 cashews, 1 tablespoon of raisins, 1 cup of thinly sliced onions, 1 tej patta (Indian bay leaf), 1 inch of cinnamon, 3 cloves, 3 green cardamoms, 3 cups of water, salt as per your taste, and 1 to 2 tablespoons of fresh coriander leaves for garnish. Begin by rinsing the kaima rice or basmati rice in water a couple of times. Then, soak the rice grains in enough water for 20 to 30 minutes. Once the soaking is complete, drain the water and set the rice aside.In a pan, heat the ghee over low to medium heat. Add half a cup of thinly sliced onions and sauté them until they turn crisp and golden. Use a slotted spoon to remove the fried onions from the pan, setting them aside for later use. In the same pan, add the cashews and fry them until they acquire a delightful golden hue. Similarly, remove the cashews from the pan and keep them aside. introduce the raisins to the pan. Let them puff up, and once they do, remove them from the heat and set them aside.Returning to the pan, add the tej patta, cinnamon, cloves, and green cardamoms. Fry these aromatic spices on low heat until they begin to splutter and crackle, releasing their enticing flavors. Next, add another half cup of thinly sliced onions and sauté them until they turn translucent.reunite the rice with its companions. Add the soaked rice to the pan and season it with salt according to your taste. Gently mix the rice, ensuring that it mingles harmoniously with the other ingredients. Pour in 3 cups of water, stirring well to combine all the flavors. Taste the water to ensure it has a slight hint of saltiness, adjusting as necessary.Cover the pan with its lid and allow the rice to simmer on low heat. As the water is absorbed and the rice grains become tender, fluffy, and perfectly cooked, a tantalizing aroma will fill your kitchen. Once the rice is cooked to perfection, gently fluff it with a fork to enhance its texture. Serve the fragrant Neychoru in the white bowl, generously garnishing it with the fried onions, cashews, raisins, and a sprinkle of freshly chopped coriander leaves. For a complete meal, pair Nei Choru with a coconut-based vegetable curry or a comforting dal.This enticing dish of ghee rice is sure to evoke a whirlwind of emotions, bringing comfort and satisfaction with each flavorful bite.
