Squid Masala, also known as Squid Curry or Squid Fry, is a delicious seafood dish made with fresh squid (or calamari), a favorite among seafood lovers, especially in Kerala. Known as "Kanava" in Malayalam, the squid is first boiled with turmeric and salt until tender, then combined with a coarsely ground masala made from roasted spices, grated coconut, and water. The dish is cooked in coconut oil with finely chopped onions, allowing the squid to absorb the aromatic flavors of the masala. For added depth, a tempering of mustard seeds, pearl onions, dried red chilies, curry leaves, and grated coconut is prepared and added to the curry, giving it a golden-brown finish. The result is a flavorful, aromatic dish with the perfect balance of heat and coconut richness, making it a standout seafood option that pairs beautifully with rice or bread.
